Stratford Chef School holding internationally-inspired meals

School draws its inspiration from acclaimed chefs, switching up styles to test out their students

If you enjoy amazing food then you need to check out the International Inspirations program being offered by the Stratford Chef School. 

“Throughout the school year, the students serve dinner to the public,” said Randi Rudner, the program manager and chef instructor at the school. “Each dinner is inspired by a chef that is internationally renowned or a preeminent figure in the culinary world. Our students will do a research project about the chef, their restaurant, and then they work through recipes to try and capture the essence of the chef.” 

No detail is spared as the program covers how tables are set, how the napkins are folded, what music is playing in the background, and even how the plates look.  This week the program focused on celebrating chefs Alice Waters, Claire Smyth, and Michel Bras. 

Each week three chefs are celebrated with enough plates to feed 40 people. Coming up next  is a celebration of Chef Ben Shewry (Tuesday, November 26), Thomas Keller (Thursday, November 28), and David Chang (Saturday, November 30). 

“Shewry is an Australian Chef who is a great friend to the school, and he has visited Stratford a few times,” said Rudner. “Thomas Keller is the father of modern American fine dining with restaurants in New York and Napa Valley, and then on Saturday it's David Chang of the Momofuko Empire.” 

Each night features a unique menu which has a focus on some of the most featured dishes of the chef being highlighted. 

“Each chef has a different style and we will really see this next week,” said Rudner. Thursday for example will bring a bit of the French laundry to Stratford,so things like white tablecloths, its very elegant. Next Saturday when we do Momofuko inspired by Chef David Chang we can expect more casual, and kind of a rock and roll theme in the dining room.”
